You can't. It's not built into IOS. You can use voice commands in iOS, though. Like "take me to <contact name> via transit." and then select Waze from the list of GPS apps. There are other threads about this around.

Thanks Alan. So bringing up the google map
is built into the IOS? Also, I tried to do a search for other threads on this topic, but was unsuccessful. Any recommendations on keywords to use in my search?
TIA ... John

When I click on an address in the Contacts app I get taken to Apple Maps, not Google Maps. Where are you looking at your contacts?

I tap on the "Contacts" icon then select a contact that has an address, then a map will be displayed with location noted with a red pin. How can you tell the difference between apple maps and google maps?

Google maps says "Google" in the bottom right. Apple maps has a folded corner in the bottom right to access settings and it will say "Data from TomTom, others" on that screen.

If you're using an older iPhone than iPhone 5 and still have iOS 5.x, i.e. you never updated to iOS 6, than it still uses Google maps by default. iOS 6 uses Apple maps by default.
Like others have said, this cannot be changed. Certain functions in iOS 6, but not all, I think, will prompt you which navigation app you want to use if you have more than one installed on your phone, and Waze is usually a suggestion on there.
