How do I go about configuring the waze app or my iphone to use waze when tapping on a contact's address instead of the default google map being displayed?

You can't. It's not built into IOS. You can use voice commands in iOS, though. Like "take me to <contact name> via transit." and then select Waze from the list of GPS apps. There are other threads about this around.

I tap on the "Contacts" icon then select a contact that has an address, then a map will be displayed with location noted with a red pin. How can you tell the difference between apple maps and google maps?

Google maps says "Google" in the bottom right. Apple maps has a folded corner in the bottom right to access settings and it will say "Data from TomTom, others" on that screen.
