As David said, it's about etymology, something US English doesn't do. Favor vs favour etc where we tend to keep the etymologically correct one FAVOURing (lol) the original spelling from French, Latin, Greek etc. Shrewsbury is the same, from Shroes meaning "I don't know how to say this town" lol :-P
