How do I indicate that a road is only a thoroughfare between certain hours?
And how to I indicate that there’s a low bridge so it doesn’t try to route lorries down a certain road?

Currently, you can’t. Waze is very limited in that it offers only a handful of predefined roadtypes, and no way to limit such roadtypes to certain hours or seasons. Many other users noticed that too and there are many entries on waze.uservoice.com that deal with the matter. Go there and vote for any suggestion that asks for support of more vehicletypes and corresponding roadtypes.
Originally I had the road as a “no entry” but that meant that many of the roads connected to it were showing errors . . .
Oh well. . .

What errors? Simply being attached to a no entry road shouldn’t produce any errors!
